Chickpea + Greens Lunch Salad

Hey, internet friends!

Long time no chat. But summah time means time to dust off the old blog. 

I didn't even plan on posting this, but it was so delicious and easy, I thought it would be a perfect recipe to ease back into blogging. I spent the morning cleaning out my room, tossing junk, setting aside clothes for donation, vacuuming under my bed (dust thicker than my actual mattress if you're wondering), etc. And suddenly it was 2:00 and my stomach was all like duuuude. 

I'm a salady lunching type, so I usually reach for a couple handfuls of greens and build a balanced bowl from there. I like this method because I can always change it up by using whatever combination of greens/fruit/veggies/nuts/beans/dressing I feel like. 

There's really not much more to say...this salad is kind of a lunch champion. It's high in protein and vitamins, comes together in just a few minutes, and can be tossed in a tupperware and taken to go in a pinch. Hope ya like it!

Chickpea + Greens Lunch Salad:

  • 2 handfuls mixed greens
  • 1 tsp olive oil
  • 1 tsp apple cider vinegar
  • 1/4 avocado, cubed
  • 1/4 cup sliced cucumber
  • 1/3-1/2 cup chickpeas
  • 5 basil leaves, sliced
  • 2 tbsp fresh lemon juice
  • spoonful of tahini
  • salt, pepper, cumin to taste
  • 1 egg

Combine the greens, oil, vinegar, avocado, and cucumber in a bowl; toss. In a separate bowl, combine the chickpeas and all remaining ingredients except the egg. Add the chickpea mixture on top of the greens, then finish with an over easy or poached egg.
