I feel like Valentine's Day suffers a lot of misdirected hostility.
I don't feel very strongly about it either way, and I agree it can get to be a little much, but I also think the world could benefit from a little more love.
We always strive to be kind and compassionate, so why not use the 14th as a day to really focus, to set intentions, to throw kindness around like confetti. Let's love especially hard. Love your family! Love your dog! Love chocolate! Love yourself! Just plain love the hell out of life!
And then try to live every day like that. Wouldn't that make life so fun?
And to fuel all this lovin', how about some muffins?
Soft, fudgey banana muffins studded with melty chocolatey chunks. If that's not love, what is?
A little naughty, a little nice, these are the perfect indulgence to treat yoself or your SO.
- 4 ripe bananas
- 1 egg
- 1 tbsp ground flax + 2 tbsp water
- dash of cinnamon
- 2 tsp vanilla
- 2 tbsp tahini (or any nut butter)
- 1/4 cup maple syrup
- ~1/2 cup water or milk
- 1 cup brown rice flour
- 2 cups oat flour + 1/2 cup regular rolled oats
- 1 tsp baking powder
- 1/4 cup cocoa powder
- 1/2 cup dark chocolate chunks
Preheat the oven to 350°F. Mix the flax and water and set aside to thicken. Mash the bananas in a mixing bowl, then add the egg, flax, cinnamon, vanilla, tahini, syrup, and water. In a separate bowl, whisk together the flours, oats, baking powder, and cocoa powder. Add wet to dry and mix until just combined. Fold in the chocolate, then divide the batter evenly into greased muffin tins. Bake until a toothpick inserted into the center of a muffin comes out clean. Approx 15-20 minutes.
