The peach craze has ended at my house, and the last few from our big box have been nudged to the back of the crisper. The poor guys are battered and bruised, a far cry from their syrupy sweet, aromatic and lush former selves. Another day would have left them withered, moldy, and very sad.
With the firm belief that allowing a summer peach to go to waste is a crime of unspeakable seriousness, I took action.
I'm doing everything in my power to cling to summer, but, despite my best efforts, all the signs are there. Morning breezes are tinged with crisp undertones, social media is plagued with back-to-school photo ops *shudder*
And worst of all, the glorious wonderful beautiful fragile and delicate produce is starting to disappear from farmers markets, replaced by heartier and more autumn-esque options.
Don't get me wrong, as the self-appointed queen of all things pumpkin, I'm your typical boots,sweaters and apple cider kinda gal. Raking leaves is my favorite activity, and I can't be trusted around a dish of candy corn. I loooveee autumn. But summer is amazing and I'm so not ready to let it go, so let's celebrate with the most summery recipe I can dream up while we still have the time.
Peaches are a dream with herbs, and mint adds the perfect special touch to this smoothie. The flavor is just enough to add an irresistible freshness without overwhelming the other flavors. Minty Peach Smoothies
Makes 2 smoothies
- 2 peaches
- 1 frozen banana; sliced
- 1/3 cup plain yogurt
- small handful of mint. (about 8-10 leaves)
- 1/2 cup green tea; brewed and chilled
Combine all ingredients in a blender and process until smooth. Pour into glasses and garnish with more mint.
