Baked Oatmeal: 3 Ways!

Happy Monday! 

Don't cry, I have chocolate. And lemon...and almond, pistachio, grapefruit, poppyseed, and raspberry! 

What I'm trying to say is, I have baked oatmeal, and your monday just got  a lot brighter.

When you're as indecisive as me (ice cream flavors are life-or-death) running a food blog can get pretty complicated. There are just so many options, I constantly have mental whiplash from trying to decide what to make! Lucky for you, decisions are overrated, so instead of making choices, I made three flavors of oatmeal. It happens. 

That's ok though, because now you have a flavor for any mood, and baked oatmeal for many Mondays to come! Also, these combinations are just the beginning. Use whatever you have on hand. Except, like, old brussels sprouts. But hey, it's your breakfast, we're not judging. 

Baked Oatmeal 3 ways

Each recipe makes one serving of oats.

For the base:

  • 1/3 cup rolled oats
  • pinch of salt

Citrus Poppyseed Almond:

Combine the oats and salt with:

  • 1 tablespoon finely chopped almonds
  • zest of 1 lemon
  • 1 teaspoon poppy seeds

In a separate bowl, combine:

  • juice of 1/2 grapefruit
  • 1 tablespoon greek yogurt
  • 2 teaspoons maple syrup
  • 1/4 teaspoon almond extract

Chocolate Avocado

(the avocado adds a rich fudginess, but the taste is undetectable in the finished product. This one seriously tastes like molten lava cake, don't fear the avocado!)

Combine the oats and salt with: 

  • 1 tablespoon cocoa powder
  • a dash of cinnamon
  • small handful dark chocolate chips (or large because chocolate) 

In a separate bowl, mix together:

  • 2 tablespoons mashed avocado (about 1/2 a small one)
  • 1 tablespoon maple syrup
  • 1 tablespoon coconut milk (or milk of your choice)
  • 1/4 teaspoon vanilla extract

Raspberry Honey Pistachio:

Combine the following in a bowl, then add the oats and salt and mix well. 

  • 1/2 mashed banana (as ripe as possible)
  • 1 teaspoon honey
  • 1 tablespoon coconut milk (or milk of choice)
  • 7-10 raspberries (however many you like)
  • 1 tablespoon chopped pistachios

To finish:

Mix wet into dry and pour into a ramekin or small, oven safe dish. Bake at 350° for 15 minutes or until no longer wet. For the last few minutes, turn on the broiler for a crispy, golden brown top. 

What's new? This past week was very busy. My dad, my sister and I spent two days on a boat learning to sail, so we're all  certified! After that, my dad, my mom and I finished up our open water dives to get our scuba diving certification!   

In other news, I am currently munching on a bowl of watermelon after XC practice #1! I'm very excited. Running is rad, my team is rad, and this season is going to be...pretty cool.
