This & That

Hello, friends. These past couple days have been hectic, tiring, busy, and crazy...and I'm soaking at all in. I'm loving summer, loving my workouts, and loving life in general.

Lately, I've been in a whirlwind of activity. Running, cooking, visiting with friends, and re-organizing my room have kept me very busy. I've also eaten some INCREDIBLE food in the last couple days. not much time for recipes, (although I would be more than happy to post any requests) but I did manage to snap some pics before digging in ;) Here are some of my latest eats: 

Best salad of my life. I MUST remember the recipe for this one. curry roasted carrots, peppers, broccoli and asparagus on a bed of spinach tossed with yogurt-sriracha dressing. Omg

I was inspired by Martha Stewart's "pie and tart" cookbook, so I made some almond crust coconut cream tarts. Only had a little nibble of the chocolate one, but got a thumbs up from my family on the rest!

Finally got to try dragonfruit. YUM.  It was definitely unique...reminiscent of kiwi but much more mild and refreshing. Especially good with yogurt.

Lastly, my dinner tonight! Dal is a highly fragrant/potent indian dish. It's so delicious and comforting as well as sooo healthy and healing: turmeric, ginger, coconut oil, etc. Had that along with some hummus and a nice salad. Life is good.

I know, so much food! I'm in heaven. I've also been all about the chocolate lately. I can't help myself! (Hot chocolate, mint chocolate bar, chocolate covered almonds and maaaaaaybe some handfuls of chocolate chips not pictured. I'm so bad. heh.)

So idk if you know, but I'm a berry fanatic. Any kind of berry, I'm all over it. Give me all the berries...ok you get it. Anyway, my dream has always been to have too many berries to know what to do with.  

It happened.  

Livin' the dream. My mom and I went strawberry picking today and did pretty darn well thank you very much. Prepare for strawberry recipes galore! Wheeee! I have so many plans for these guys....that is if I can stop eating them right out of the box!

My mom also surprised me with some mini pans. Isn't she just the greatest?!?! I don't even have a full sized double boiler....hmm...looks like the perfect size for melting a lil chocolate. Watch out, anything-in-the-cabinet-that-can-be-dipped-in-chocolate. I'm coming for you. But aren't they just so cute? And a teensy spatula too, it doesn't get better than this, people.

I also came across this great post by one of my favorite bloggers, The Little Honey Bee, and I think it's definitely worth a read. She somehow managed to take my EXACT feelings and put them coherently into a written form that makes sense. SenseCan that really happen? Anyway, I can really relate to what she's saying and I totally agree.

Ok, I'm done! I hope I didn't bore you all to death, I'm still trying to figure out how the whole blog thing works. I'm wide open to constructive criticism/pointers! Let me know what you think and what you want to hear about, ok? 

I hope you guys are having a wonderful time kicking off this summer and eating lots of delicious food, too! For right now, I'm still working out a few technical website things and waiting on my logo, but things are going great.
