Thanksgiving Recap

Hey there, how was everyone's Thanksgiving? 

Mine started out with a little Turkey Trot in Kewaskum. It was a 5k, so I ran easy for the first two miles, then picked it up at the finish to refresh a little for the footlocker on Saturday. (which went great, by the way!)

After that, I spent the whole day in the kitchen making...wait for it...tacos!

That's right, Thanksgiving needed a little shaking up this year. I randomly got this idea in July when I was on a run. I don't know what I was thinking but I couldn't be happier. With a little brainstorming help from my mom, I basically re-vamped every traditional T-day dish into a taco fixing. There was virtually no leftovers, so I'm thinking that's a sign we did well. ;) Here are the results!

Fill with zesty spiced turkey, roasted potatoes, baked butternut squash + fennel + mushrooms with thyme, rosemary, Manchego, and toasted hazelnuts, and crispy green bean fries.

To top: Mexican crema, jalepeños, cojita, lime wedges, and cranberry salsa. On the side was a fresh and crunchy apple fennel salad.

My plate looked like this. Corn tortilla, turkey, crispy potatoes,  baked squash + muhsrooms + fennel, cranberry relish, cojita, + a squeeze of lime.

And for the most important part...dessert! I made pumpkin ginger ice cream sandwiches. I don't even have words for these. Just make them.

There was also crackers, cheese, olives, and roasted red pepper cashew dip (omg), healthy (sh!) caramel bars and pumpkin cupcakes. The caramel bars were so good they might've earned their own post...stay tuned. 

We also had a turkey piñata...because duh. 

I know it sounds cheesy, but no matter how the food turns out, the most important part of Thanksgiving truly is family. In that way, this year was the best I've ever had. The tacos were a blast, but the best part of the day was hanging out with everyone that I've missed. We played games, laughed our butts off at fail videos, and took probably the best selfie of all time. Now that's something to be thankful for.
