This drink is everything I love about fall. It's warm, comforting, spicy, sweet, contains pumpkin (necessary) and pretty much feels like a hug in a cup (or mug if you're in a rhyming mood.)
Cuddle up with a blanket and wrap your fingers around warm and toasty mug full of delicious and healthy fall goodness. No need to worry about nasty chemicals or artificial sweeteners, or if your pumpkin drink even has real pumpkin in it. *shudder*

Pumpkin Chai Latte
- 1 cup boiling water
- 1 chai tea bag
- 1 cup almond milk
- 1 1/2 tablespoons pumpkin puree
- 1/4 teaspoon vanilla extract
- 1/8-1/4 teaspoon pumpkin pie spice; to taste
- 1 teaspoon maple syrup (more if you want it sweeter)
Pour the boiling water into a liquid measuring cup and add the tea bag. Steep for 5 minutes
Warm the milk in the microwave for 30 seconds and froth. (if you have an espresso machine with a steamer, you can skip the previous step and simply steam your milk.
To the tea, add the pumpkin, vanilla, spices, and syrup and whisk to combine. Divide between two mugs, then pour the frothed milk on top.
Garnish with a dusting of pumpkin pie spice and a cinnamon stick.
Notes: I stumbled across this article containing step-by-step directions on frothing milk in the microwave. I haven't tried it, but it would be worth a try if you don't have a milk frother! If you try, let me know how it goes.
